Lemon Goodness

I have been on a lemon kick. In a quest for some winter color and tang, they just sounded good. Plus, the grocery store happened to have BAGS of lemons marked down to a buck. So far we have enjoyed Rae Grant’s lemon bars. These are in her adorable book, Cooking Fun. You should check out her book! It’s full of fun, simple recipes for little cooks and big cooks alike. I did have to take out a bit of the sugar, but that’s just my personal bit.

I also made some lemonade. Actually, I made a lemon syrup. See, we all like our lemon drinks a bit differently. “to taste” is always my favorite.
Here’s what I did:
- squeezed the 14 lemons I had and added a little juice to make an even 3 cups.
- made a syrup by boiling 1 cup water and stirring in 2 cups of sweetner (cane sugar, agave nectar, honey, maple syrup, whatever you like). You might like it more sweet, but that was enough for me
- combined the lemon juice, some zest, the simple syrup, and a dash of vanilla.

The syrup fit into two empty wine bottles and it should probably be refridgerated.

We have added it to still water (hot and cold), seltzer water, and even cheap white wine. (about 1/4 cup lemon goodness to a big glass if water seems right to me)

Today

Today would have been my Grandma Steiner’s Birthday. Today she would have seen little great-granddaughters at play. She would have laughed as we fussed over her with cake and small tokens of our love for her. I know that she had a long life that she sought to live as happily as possible, but some days, I selfishly wish that she could have celebrated just a few more birthdays with us; that she could have marveled at my little girls; and that my girls could have held her soft, gentle hand.

Somewhere

Dare I admit to already feeling spring fever? I’m pretty sure that winter will hold at least some of its grip for a good while longer. But the good news to my body is the potential for more daylight, sunshine, and meltiness. Hey, I’ll take what I can get. So how we enjoy these hints that spring will arrive? Today that meant turning off the heat, opening the windows for a few hours, and changing the sheets. It almost made it smell like sheets fresh off the line.  It also meant a nice long walk in the park. The snow was wet and heavy but with a pure blue sky and lots of sun, we hardly minded.

I did have to let Riana do something that scared me.

Meanwhile, Amelia played on a “horse” and later we all went swinging at the playground.

Next up? I think I need to sprout some seeds…

V-Day Ignored

Chinese New Year, Valentines, and Olympics in one little day?! We managed to have a lovely day though we didn’t really celebrate either of the holidays. Swedish pancakes, a Czech movie date, and then some pairs skating.
We managed to make Valentines (see I’m not completely the grinch of valentines!) bake gingerbread animals, and play outdoors with the rest if our weekend. This girl cannot complain. :)
