I have been on a lemon kick. In a quest for some winter color and tang, they just sounded good. Plus, the grocery store happened to have BAGS of lemons marked down to a buck. So far we have enjoyed Rae Grant’s lemon bars. These are in her adorable book, Cooking Fun. You should check out her book! It’s full of fun, simple recipes for little cooks and big cooks alike. I did have to take out a bit of the sugar, but that’s just my personal bit.
I also made some lemonade. Actually, I made a lemon syrup. See, we all like our lemon drinks a bit differently. “to taste” is always my favorite.
Here’s what I did:
- squeezed the 14 lemons I had and added a little juice to make an even 3 cups.
- made a syrup by boiling 1 cup water and stirring in 2 cups of sweetner (cane sugar, agave nectar, honey, maple syrup, whatever you like). You might like it more sweet, but that was enough for me
- combined the lemon juice, some zest, the simple syrup, and a dash of vanilla.
The syrup fit into two empty wine bottles and it should probably be refridgerated.
We have added it to still water (hot and cold), seltzer water, and even cheap white wine. (about 1/4 cup lemon goodness to a big glass if water seems right to me)
